There are other versions of Viennese Pie, but this is our favorite. Delicious!
Dough Ingredients
- 2 cups (tea) of wheat flour
- 1 cup cold butter
- 1 pinch of salt
- 1 tablespoon of sugar
- 2 eggs
Filling Ingredients
- 1 kg of apples
- 100 grams of seedless raisins
- 1 cup (tea) sugar
- 2 tablespoons of rum
- 1 teaspoon of cinnamon powder
- 1 and ½ tablespoon of melted butter
- 5 maria cookies
- 1 beaten egg yolk
Preparation Mode
- On the table, place the flour and make a well in the center.
- Add the eggs, sugar and salt there.
- Mix everything with your fingertips, forming a very fine crumb.
- Add the butter little by little and work the dough until it is homogeneous.
- Form into a ball and let it rest in a cool place for 1 hour.
Stuffing Preparation
- Peel the apples, remove the seeds and cut into thin slices.
- Place in a bowl and add the raisins.
- Sprinkle sugar and cinnamon on top.
- Add the rum and let it macerate.
Assembling the Pie
- Grease and flour a rectangular or round pan.
- Preheat the oven.
- Roll out 2/3 of the dough to a thickness of 4 mm.
- Line the pan with it, without trimming the excess dough that comes out and falls from the sides of the pan.
- Cover the bottom of the pan with maria biscuits.
- Arrange the macerated fruits on them and cover everything with melted butter.
- Roll out the rest of the dough.
- Brush the entire edge of the pie with the egg yolk and place the remaining dough on top.
- Join the edges of the dough by shaping and decorating the pie to your liking.
- You can also choose to join the edges together by using a rolling pin and, at the same time, cutting off the excess.
- Brush the rest of the egg yolk onto the top of the dough and make small holes with the tip of a sharp knife.
- Place in the hot oven for approximately 1 hour.
- Remove and sprinkle sugar over the top of the pie.
Mom Tips
Serve the pie warm or cold, as a dessert or with tea.
