Eliminating gluten helps you lose weight and gain health!

Ingredients

  • 1 and ½ cups (tea) of rice flour
  • ½ cup (tea) of sweet cassava starch
  • ½ cup (tea) of cornmeal
  • ½ cup (tea) of coconut milk
  • 4 tablespoons of olive oil
  • 1 tablespoon of demerara sugar
  • 1 teaspoon sea salt
  • 1 tablespoon of dry biological yeast
  • 4 eggs

Preparation Mode

  1. Set aside the yeast.
  2. Dilute the coconut milk in 1 cup of water. Set aside.
  3. Grease a loaf pan with olive oil and rice flour.
  4. Preheat the oven to medium temperature.
  5. In a blender, except for the yeast, beat all the other ingredients (including the dissolved coconut milk).
  6. Add the reserved yeast and beat enough to mix well.
  7. Pour the batter into the pan.
  8. Cover and let rise until doubled in size.
  9. Bake for approximately 30 minutes or until fully cooked.

Mom’s Tips

Demerara sugar contains no additives and has light brown grains with high nutritional values. It is a sugar that does not alter the flavor or color of preparations. It is found together with oat flour in health food stores.
