Try this empanada recipe and make it for next Easter. Delicious!
Ingredients Dough
- 1 kg of wheat flour
- 300 grams of softened margarine
- 1 tablespoon of salt
Ingredients Filling
- 2 cups (tea) of desalted, cooked and shredded cod.
- ½ cup (tea) of chopped red pepper
- ½ cup (tea) of chopped black olives
- ½ cup (tea) of chopped onion
- 2 tablespoons of olive oil
Preparation Method Filling
- In a pan, heat the olive oil and sauté the onion, cod and pepper for 5 minutes.
- Let it cool.
- Add the olives and mix.
Dough Preparation Method
- Grease a baking tray with oil and set aside.
- Preheat the oven to medium temperature.
- In a bowl, place the flour, margarine and salt, mixing with your fingers until it forms crumbs.
- Keep adding warm water until the dough is smooth and doesn’t stick to your hands.
- Roll out the dough, cut out discs with a cutter or the top of a glass, add the filling and close the entire edge by “braiding” the dough.
- Place in the pan, brush with egg yolk and bake for approximately 20 minutes or until golden.
- Serve.
Mom’s Tips
Yields approximately 25 units.
