Ingredients

  • 1 cup (tea) of powdered milk
  • 3 tablespoons of wheat flour
  • 2 tablespoons melted ghee
  • 1 pinch of ground cardamom
  • ½ cup (tea) of warm milk
  • ½ teaspoon baking powder
  • 1 tablespoon white raisins (optional)
  • 1 tablespoon chopped almonds (optional)
  • 1 tablespoon pistachios (optional)
  • Oil for frying

Ingredients Syrup

  • 200 ml of water
  • 1 teaspoon rose water
  • 1 and ¼ cups (tea) of sugar
  • 1 pinch of ground cardamom

Preparation Mode

  1. Fill a large skillet halfway with oil. Set aside.
  2. Place all the syrup ingredients in a pan and bring to the boil.
  3. Lower the heat and let it cook for just 1 minute.
  4. Let it cool and then place it in a large pan or bowl. Set aside.
  5. In a large bowl, mix the flour, powdered milk, cardamom and yeast.
  6. Add the almonds, pistachios and raisins.
  7. Add the ghee, then the milk and mix the ingredients well.
  8. Cover the bowl and let it rest for 20 minutes.
  9. After this time, knead the dough and shape it into small balls.
  10. Heat the oil over medium heat for at least 5 minutes.
  11. Lower the heat and fry the dumplings all at once or in batches.
  12. When the dumplings float and double in size, increase the heat to medium, and turn them frequently, until golden brown.
  13. Remove them with a slotted spoon and place them on paper towels.
  14. Let it cool.
  15. Place the dumplings in the reserved syrup.
  16. On low heat, let the syrup heat for approximately 5 minutes.
  17. Gently squeeze the cupcakes so they absorb the syrup.
  18. Serve immediately or refrigerate.

Mom’s Tips

You will find good rose water (for culinary purposes) in Arab stores specializing in ingredients for Arab and Lebanese cuisine, and in aromatherapy stores. Always check the expiration date on the packaging.
