Zucchini is probably the most consumed vegetable in summer. Sometimes, after having enjoyed it in a pan, in a gratin, in a gazpacho, we no longer know how to prepare it. Do you want a comforting and fragrant dish without spending hours in the kitchen? Zucchini tagine style is the perfect solution! Inspired by the famous Moroccan dish, this simplified recipe allows you to make a meal with spicy and tasty flavors. Let yourself be tempted by this colorful and delicious dish!

1. Wash the zucchini and cut into thick pieces. Thinly slice the onion and chop the garlic. Dice the tomatoes.

2. In a large frying pan, heat the olive oil. Add the onion and garlic, then sauté for a few minutes until tender. Add the ras-el-hanout and tomatoes. Cook for 5 minutes over low heat.

3. Add the zucchini, mix well to coat the vegetables with spices. Cook for another 5 minutes. Cover with water to the level of the zucchini and simmer over low heat for 20 minutes.

4. The zucchini should be tender but still slightly firm. Serve hot, garnished with chopped parsley or coriander. Salt and pepper to taste.
