To get the most out of your mirabelle plums, it is important to choose them carefully. In fact, since these fruits are relatively fragile, their appearance is important to ensure their taste. We advise you to choose fruits with smooth skin, free of roughness, and to choose them with a golden color. If you see a few small freckles, that’s even better, because it means that the fruits have benefited from the sun during their ripening.
Before cooking them into jam, rinse them thoroughly in water, remove any remaining tails and cut them in half to remove the stone. And there you have it, ready to cook!
