Ingredients
- 1 kg of cleaned red fish, with skin
- ¼ medium cucumber, peeled and cut into very thin strips
- ½ red bell pepper, seeded and cut into strips
- ½ medium green bell pepper, seeded and cut into strips
- ¼ small chili pepper, seeded
- 1 teaspoon garlic, finely chopped
- 1 tablespoon onion, finely chopped
- 1 teaspoon ginger, finely chopped
- 1 tablespoon of oil
- 2 tablespoons of well-mashed tomato pulp
- 3 tablespoons pineapple juice
- ½ cup (tea) of fish broth
- 1 tablespoon white wine vinegar
- 1 tablespoon of cornstarch dissolved in 2 tablespoons of water
- 1 tablespoon chopped green onion
- Fresh cooked peas
- Black pepper to taste
- Salt to taste
Preparation Mode
- Cut the fish into strips and then into 4 cm squares. Set aside.
- In a pan, heat the oil, add the onion, garlic, ginger, cucumber, peppers, chili pepper and fry for approximately 1 minute.
- Add the tomato pulp, pineapple juice, fish stock and mix.
- When it starts to boil, lower the heat and let it cook for approximately 2 minutes.
- Stirring constantly, add the cornstarch and let it thicken.
- Add the vinegar, season with pepper and salt, mixing well.
- Remove from heat and set aside in a bowl.
- Fill the bottom of a pan with water, place on the stove and bring to the boil.
- Place the fish in a metal colander, fit into the pan and let it steam for approximately 5 minutes or until the fish is very tender.
- Remove the fish from the steamer, place in a baking dish and pour the sauce over the top.
- Sprinkle with chives and peas and serve hot.
Mom’s Tips
Yields approximately 4 servings.
If you can’t find red fish, use another type of fish that can be steamed.
If you prefer, replace the peppers with carrots cooked al dente.
