Ingredients

  • 2 kg of pork chops in one piece
  • 1 can frozen concentrated pineapple juice
  • 1 clove of garlic, finely chopped
  • 1 small onion, chopped
  • ¼ cup (tea) of brandy
  • ½ teaspoon ground ginger
  • Salt to taste
  • Butter

Preparation Mode

  1. Preheat the oven to 170ºC.
  2. Place the chop in a baking dish greased with butter.
  3. Make light vertical cuts between the chop bones, using a sharp knife.
  4. Bake for 2 hours.
  5. Separately, mix the pineapple juice, garlic, onion, ginger, salt and bring to the boil, stirring constantly.
  6. Remove from heat, add cognac and mix.
  7. Brush the meat with this sauce every 15 minutes during the last hour it is in the oven.
  8. Serve the remaining sauce on the side.

Mom’s Tips

Pineapple juice = 180g, chopped onion = ¼ cup

Chop yield = 8 servings
