A typical American dessert is the sweet “sandwich”. A sure hit!
Ingredients Dough
- 200 grams of wheat flour
- 150 grams of sugar
- 80 grams of cocoa powder
- 75 grams of melted unsalted butter
- 125 grams of natural yogurt
- ¼ teaspoon vanilla extract
- 25 ml of milk
- ¾ teaspoon baking soda
- ¼ teaspoon baking powder
- 1 large egg
Ingredients Creamy Marshmallow (optional)
- 2 egg whites
- 1 cup (tea) of sugar
- 2 tablespoons of water
- 1 teaspoon vanilla extract
- 2 tablespoons of honey
Creamy Marshmallow Preparation Method
- In a heatproof bowl, mix all ingredients.
- Place in a bain-marie and beat continuously for approximately 7 minutes or until thickened, creamy and consistent.
- Remove from the bain-marie and beat for another 1 minute.
- Allow to cool completely before using.
Ingredients Filling
- 280 grams of powdered sugar
- 170 grams of unsalted butter at room temperature
- 220 grams of creamy marshmallow
Preparation Mode
- Line two large rectangular baking sheets with parchment paper.
- Preheat the oven to 170ºC.
- Sift the dry ingredients and set aside.
- In a mixer, on low speed, beat the egg with the sugar until you get a fluffy cream.
- Add the mixture of milk, yogurt and vanilla extract to this cream.
- Add the melted butter and beat on medium speed until the mixture is smooth.
- Add half of the reserved dry ingredients and beat on low speed until well combined.
- Add the remaining dry ingredients and beat again until smooth.
- Refrigerate for 30 minutes.
- Remove and shape into balls 3-5 cm in diameter.
- Distribute on the baking trays, leaving 2-3 cm of space between them.
- Bake for approximately 10 to 14 minutes or until lightly browned and firm to the touch.
- Remove them from the baking sheet and transfer them to a wire rack to cool.
- Once they are completely cold, fill them.
Preparation Method Filling
- In a mixer, on low speed, beat the butter and sugar until well mixed.
- Increase the mixer speed, add the marshmallow and beat until you get a light and fluffy cream.
- Refrigerate for 30 minutes to set.
- Using a spoonful of cream, assemble the woopies.
Mom’s Tips
The above recipe for creamy marshmallow is optional because you can find it ready-made in the ice cream section of good supermarkets.
