Ingredients

  • 1 jar of mayonnaise
  • 4 cups (tea) of wheat flour

Ingredients Filling

  • 5 medium boiled potatoes
  • 2 chopped onions
  • 1 cup (tea) of chopped herbs
  • ½ cup (tea) of milk
  • ¼ cup (tea) of grated parmesan cheese
  • 3 tablespoons of oil
  • 3 beaten eggs
  • Salt to taste

Preparation Mode

  1. In a bowl, mix the mayonnaise with the wheat flour until you obtain a smooth dough.
  2. Using a rolling pin, roll out the dough.
  3. Using the dough, line the bottom and sides of a 25 cm diameter pan. Set aside.
  4. Preheat the oven to 200ºC.

Preparation Method Filling

  1. Put the oil in a pan and brown the onion.
  2. Add the potatoes, herbs and season with salt. Mix gently and set aside.
  3. Beat the eggs, milk, add the cheese and mix. Set aside.
  4. Fill the pie with the reserved potato mixture.
  5. Spread the reserved egg mixture on top.
  6. Place in the oven and bake for approximately 45 minutes.

Mom’s Tips

Suggested herbs: rosemary, sage, basil or herbs of your choice.

Yields approximately 6 servings.
