Bring elegance to your table with this special recipe. The famous cake in honor of the city of Frankfurt. The crunchy crust symbolizes gold and the cherries symbolize the precious stones of the crown.

Ingredients Dough

  • 2 cups (tea) of wheat flour
  • 1 and ½ cup (tea) of sugar
  • 1 cup (tea) of cornstarch (cornstarch)
  • 2 tablespoons lemon zest
  • 150 grams of butter
  • 1 pinch of salt
  • 5 eggs
  • 1 tablespoon baking powder

Ingredients Filling

  • ½ liter of milk
  • 1 box of vanilla flavored pudding powder
  • 200 grams of butter (1 packet), softened
  • ¾ cup (tea) of sugar
  • 1 tablespoon vanilla sugar

Ingredients Jelly

  • 300 grams of cleaned and chopped strawberries
  • 150 ml of water
  • ½ cup (tea) of sugar

Ingredients Crunchy Topping

  • 130 grams of walnuts
  • ½ teaspoon butter
  • 1/3 cup (tea) of sugar
  • Cherries for decoration

Dough Preparation Method

  1. Grease and flour a bundt pan. Set aside.
  2. Preheat the oven to 180ºC.
  3. Sift the flour with the baking powder and set aside.
  4. In a mixer, beat the butter and sugar until you get a light and fluffy cream.
  5. Add the eggs, one by one.
  6. Add the lemon zest and salt.
  7. Turn off the mixer and add the flour and yeast mixture, stirring gently.
  8. Place in the pan and bake for approximately 35 minutes.
  9. Remove and let cool.

Preparation Method Filling

  1. Mix the pudding powder and sugar.
  2. Place in a pan, add milk and mix well.
  3. Cook over low heat, stirring constantly until it thickens and cooks a little.
  4. Remove, place in a baking dish, cover with plastic wrap and let cool.
  5. In a mixer, beat the butter with the sugar until you get a white, fluffy cream.
  6. Add the cold pudding, little by little, and mix well.

Jelly Preparation Method

  1. In a pan, place the strawberries, sugar and water.
  2. Bring to a boil, stirring occasionally, until thickened.
  3. Let it cool before using.

Preparation Method for Crispy Topping

  1. Grease a baking dish with butter. Set aside.
  2. In a pan, place the first three ingredients.
  3. Cook over medium heat, stirring constantly until you get a caramelized mixture.
  4. Pour into the baking dish and let cool.
  5. Remove into pieces and using a rolling pin, crush the pieces.

Cake Assembly

  1. Divide enough filling to fill all the pastries and to cover the cake.
  2. Cut the cake two or three times.
  3. Spread the jelly in the center of each circle and the filling on the sides.
  4. Cover the cake and decorate with the crunchy topping.
  5. Decorate with cherries.

Mom’s Tips

Do not substitute butter for margarine.

The lemon zest and vanilla sugar can be replaced with rum.

The ideal is to use homemade jelly and not industrialized jelly.

Walnuts can be replaced with almonds.
