Traditional Swiss recipe already highly appreciated by Brazilians. Crispy and delicious!

Ingredients

  • 2 potatoes
  • 1 cup thin smoked sausage
  • 2 tablespoons finely chopped onion
  • 2 tablespoons oil or butter
  • White pepper to taste
  • Nutmeg to taste
  • Salt to taste

Preparation Mode

  1. Pass the sausage in boiling water for approximately 30 seconds to remove excess fat.
  2. Drain and chop into small pieces.
  3. Peel the potatoes, wash them and grate them on the coarse side of the grater.
  4. Dry/squeeze the grated potato in a clean kitchen towel.
  5. In a non-stick frying pan, over medium heat, add the oil and sauté the onion.
  6. Add the sausage and sauté some more for 2 minutes.
  7. Distribute the potato over the top and throughout the pan.
  8. Squeeze/press with the help of a spatula or slotted spoon.
  9. Season with pepper, nutmeg and salt.
  10. Don’t stir. Do not cover the frying pan.
  11. Fry for approximately 8 minutes or until golden underneath.
  12. Serve immediately garnished with green scent.

Mom Tips

The sausage is optional; you can make pure Rösti.

If you prefer to brown both sides of the Rösti, you can use a pancake maker for the procedure.

Suggestions for fillings for Rösti: Ham, smoked ricotta, olives, vegetables, low-fat/skim cheese.

Yield: Consider 1 potato per person/individual portions.
