It must be said that in summer, autumn or winter, quiches and tarts are quick and particularly popular preparations. Fruit tart, quiche Lorraine, everyone has their own Proust madeleine. The problem ? Generally, when we prepare them at home and we often have some left over.

We then wonder how to properly preserve them. Can they be left at room temperature or in the fridge, is there a better option like freezing? Today, we answer all your questions in this article.

The first thing to know is that leaving your quiche, tart or any other preparation at room temperature is not a good idea. Indeed, beyond a certain duration, the risk of food contamination increases. Virologist Océane Sorel looked into the subject via an Instagram video: ”The important thing is not to let the dish sit at room temperature for more than 2 hours after it comes out of the oven (source ANSES). In fact, by cooling certain parts of the food will reach ideal temperatures for the proliferation of bacteria which can be dangerous. The growth of bacteria will be exponential and if it reaches a certain number then this is where poisoning can occur so the less time we give them to “make baby bacteria” the less risk of poisoning there is. ”.

So, quiche or tart you can keep them at room temperature but not more than two hours.

In the refrigerator: Concerning the tarts, it is therefore best to keep them in the refrigerator for around 3 to 4 days maximum. It’s up to you to check its appearance to find out if it is still good. Don’t forget to wrap it well with cling film or otherwise with aluminum foil.

In the freezer: Regarding freezing, you can freeze the raw dough for about 2 months before using it. It is possible to store it directly in the tart mold by darkening your dough and wrapping it in cling film. If you want to make a tart with a fruit that releases water, it is best not to freeze the dough and the mixture together.

If your pie is already ready you can freeze the slices without problem. Store them in an airtight container that you can leave in the freezer for 2 to 3 months. Please note that most tarts, whether vegetable, fruit or chocolate, keep perfectly in the freezer.

Don’t forget to indicate the date on which you freeze your pie so as not to leave it too long.

In the refrigerator: quiches, as they are made with eggs, should be consumed 3 to 4 days after their preparation provided they are refrigerated well.

In the freezer: Regarding freezing, quiches are generally made from sensitive foods such as eggs, salmon or others… which are therefore more at risk in terms of bacterial contamination. The best is therefore not to freeze them or otherwise to respect certain very strict hygiene rules. Once ready, wait for your quiche to cool before freezing it. Before pre-freezing the quiche at -24°C, place it on a freezing tray covered with cling film for 2 hours. Then, put it in aluminum foil, and place it in an airtight container or in a freezer bag, taking care that there is no air in it. Then store it in the freezer at -18°C minimum. You will keep it like this for about 2 months.

Don’t forget once again to indicate the date on which you place your quiche in the freezer. And check the date of the ingredients used for your quiche so that it is not outdated.
