Dough Preparation Method

  1. Grease a round pan with butter and set aside.
  2. Prepare the dough 1 hour before using it.
  3. Place the wheat flour on a smooth surface and make a well in the center.
  4. In this hole, place the egg yolk, butter, salt and 2 tablespoons of ice water.
  5. Using your fingertips, work the dough quickly.
  6. Add the rest of the ice water, mix and, if necessary, add a little more water.
  7. You should obtain a firm dough, but not hard.
  8. Make a ball with the dough, place it in a plastic bag and let it rest for 1 hour in the fridge.
  9. After this time, roll out the dough and line the bottom and sides of the reserved pan.
  10. Prick the bottom of the dough with a fork.
  11. The dough should not be completely cooked; Bake in a moderate oven for approximately 20 minutes.
  12. The dough will then return to the oven, with the filling.

Filling preparation method

  1. Grate the onions and raw potatoes.
  2. In a pan, melt the butter and sauté the onions and potatoes until you get a kind of golden puree.
  3. Stirring constantly with the help of a wooden spoon, sprinkle with wheat flour and let it cook.
  4. Remove the pan from the heat, add the beaten eggs, half the mozzarella cheese and the cream.
  5. Season with nutmeg, pepper and salt.
  6. Distribute this mixture over the almost cooked pasta and sprinkle with the remaining mozzarella cheese.
  7. Place a few pieces of butter and onion rings on the pie.
  8. Place in the hot oven for 5 minutes with the oven door slightly open.
  9. Close the oven and let it cook at medium temperature for approximately 20 minutes or until browned.
