Dough Ingredients

  • 50 grams of wheat flour
  • 75 grams of sugar
  • 50 ml coconut milk
  • 4 eggs
  • 1 teaspoon of baking powder

Filling Ingredients

  • 250 grams of fresh strawberries, sanitized and chopped
  • 200 ml fresh cream
  • 50 grams of icing sugar
  • ½ teaspoon vanilla essence

Strawberry Sauce Ingredients

  • 150 grams of strawberry
  • 1 teaspoon of lemon juice
  • 1 tablespoon of sugar

Preparation Mode

  1. Grease a baking tray with butter and flour.
  2. Line the bottom with baking paper and grease the paper as well.
  3. Preheat the oven to 180ºC.
  4. Sift the flour with the baking powder. Book.
  5. Using a mixer, beat the egg whites until they start to foam.
  6. Gradually add the sugar and beat until you get a firm, shiny mixture. Book.
  7. Beat the egg yolks until they are tripled in volume.
  8. Gently add 1/3 of the beaten egg whites.
  9. Add the dry ingredients in three steps, stirring gently.
  10. Add the coconut milk and mix well.
  11. Add the rest of the egg whites and stir gently.
  12. Place the dough in the pan and bake for approximately 10 minutes or until a toothpick inserted into the dough comes out clean.
  13. Remove and turn out onto a kitchen towel.

Filling preparation method

  1. Beat the cream with the essence and sugar until you get firm peaks. Book.
  2. Cut the strawberries. Book.

Sauce Preparation Method

  1. In a blender, blend the strawberries with the sugar and lemon juice.
  2. Sift. Book.

Assembly

  1. On one third of the dough, spread the whipped cream.
  2. On top, distribute the strawberries.
  3. Carefully roll the roulade so it doesn’t break.
  4. Place the roulade on a rectangular platter.
  5. Sprinkle with sugar, decorate and serve with the sauce.

Mom Tips

Clean the fruit well. Leave the strawberries, after washing, immersed in 1 liter of water with 1 tablespoon of lemon juice, vinegar or baking soda. Remove and rinse under running water.

Know that because it is rich in water, strawberries have a diuretic action and low caloric value.

If you can, always try to use organic strawberries.
