It is a delight in our breakfasts and snacks! Spread on a toasted brioche, a pancake or a waffle, or integrated into a yogurt or compote, honey is essential. You may never have asked this question, but did you know that it is not recommended to use a metal spoon to collect honey from the jar? We explain why.

Very often, when we put a pot of honey on the table, everyone helps themselves with a metal spoon. According to Doctor Jimmy Mohamed, we must forget this habit! “The metal will distort what is positive in the honey” he explains. Because honey has an acidic pH, which will react to the metal surface of the spoon. As a result, all its good nutrients and flavors risk being inactivated.

This is even more important if you leave the spoon immersed in the pot! So no more stainless steel or steel spoons, make way for wooden spoons, which will not alter the honey. Better yet, since honey is porous, it will stick better to the spoon. So opt for a “honey spoon” in a circular shape, with small hollow shelves that allow you to trap the liquid before placing it on your slice of bread or your yogurt. Bonus, wood is more ecological, non-toxic and biodegradable. So you have everything to gain!

A 100% natural product, honey is composed of carbohydrates (fructose and glucose). Its sweetening power is higher than that of classic white sugar, which allows you to use a little less (in theory anyway!).

Honey also contains minerals, trace elements, and some vitamins. It is also touted for its anti-oxidant properties. Well known for its anti-bacterial and anti-inflammatory power, it helps soothe sore throats or coughs for example. Be careful though, honey remains a sweet product, which should be consumed in moderation!

Without wishing to be chauvinistic, favor honeys of “French origin” to promote local heritage and scrutinize the labels. The more information you have about traceability, the better! Depending on your tastes, you choose a more or less sweet honey (acacia is considered one of the most popular) or more distinctive (chestnut for example). Good news, honey keeps indefinitely or almost. Keep it at room temperature and avoid putting it in the refrigerator, which causes it to set.
