Ingredients
- 6 medium potatoes without skin
- 1 cup cooked broccoli florets
- 1 cup cooked and chopped green beans
- 1 cup diced cooked carrot
- ½ cup drained green corn
- 1 cup chopped palm hearts
- ½ cup drained peas
- 1 cup mayonnaise
- Boiled eggs
- Black pepper to taste
- Salt to taste
- Olives
- Oil
Preparation Mode
- In a pan, over medium heat, cook the potato in salted water for approximately 20 minutes or until softened. It should be cooked but firm.
- Remove, let cool slightly and chop into cubes
- Add mayonnaise, pepper, salt and mix gently.
- In a bowl, mix the broccoli, carrot, corn, hearts of palm and green beans.
- Add the potato mixture and mix gently.
- With olive oil, grease a mold of your choice.
- Add the salad and press gently.
- Refrigerate for at least 2 hours.
- Unmold and decorate with boiled eggs, olives and parsley sprigs
Mom Tips
Approximate yield of 8 servings.
To form, you can use a medium-sized ramekin, a pan with a central hole, a bread pan or another pan of your choice.
