Cornmeal bread

Ingredients

  • 2 cups (tea) of wheat flour
  • 1 teaspoon of fennel seeds
  • 2 cups of cornmeal
  • 1 cup (tea) sugar
  • 2/3 cup (tea) milk
  • 1/3 cup (tea) of water
  • 1 pinch of salt
  • 1 level tablespoon of baking powder
  • 2 eggs

Preparation Mode

  1. Grease a baking tray and sprinkle with cornmeal. Book.
  2. Preheat the oven to medium temperature.
  3. In a blender, beat the milk, water and eggs. Book.
  4. In a large bowl, mix the flour with the cornmeal.
  5. Add sugar, yeast and salt. Mix.
  6. Add the reserved blender mixture and mix without beating.
  7. If necessary, add a little more flour and cornmeal mixture.
  8. On a greased surface, knead the dough a little.
  9. Model it in the shape of cornbread or buns and place it in the pan.
  10. Bake for approximately 45 minutes.

Mom Tips

Makes 1 medium bread and 5 bread rolls.

There is the option of molding just cakes.

Sweet Broinha

Ingredients

  • 2 cups of sifted cornmeal
  • 1 and ½ cup (tea) sweet cassava starch
  • 1 cup of milk (tea)
  • ½ cup (tea) oil
  • 1 and ½ teaspoon of fennel seeds
  • 1 teaspoon of salt
  • 1 can of condensed milk
  • 2 eggs
  • 1 tablespoon of baking powder

Preparation Mode

  1. Grease a mold with oil and sprinkle with cornmeal. Book.
  2. Preheat the oven to 200ºC.
  3. In a pan, mix the milk, condensed milk, oil, fennel and salt.
  4. Bring to the boil and when it starts to boil, add the cornmeal and tapioca flour all at once and stir quickly to avoid lumps.
  5. Stir until it comes off the bottom of the pan.
  6. Place in a large bowl and add the eggs one by one, mixing well after each addition.
  7. When the dough is cold, add the yeast and mix well.
  8. Form into buns and place on the baking tray.
  9. Bake for approximately 25 minutes.

Mom Tips

Approximate yield of 35 units.

Spray the broinhas with sifted cornmeal.
