Bolo de Rolo is a typical specialty of the Northeast. Irresistible with a good cup of coffee!
Dough Ingredients
- 4 and ¼ cups (tea) of sifted wheat flour
- 2 and ¾ cups (tea) of sugar
- 2 and ½ cups (tea) butter
- 15 eggs
Filling Ingredients
- 500 grams of strawberry jam
Utensils
- 8 sheets of baking paper measuring 35 x 25 cm
Preparation Mode
- Distribute the sheets of baking paper on the table and grease them with butter.
- Preheat the oven to 220ºC.
- In a mixer, beat the eggs, butter and sugar.
- Mix the wheat flour until you get a smooth, easy-to-spread dough.
- On a rectangular baking tray, larger than the sheets, facing down, place a sheet of baking paper.
- Using a spatula, spread a very thin layer of batter.
- Bake for 3 minutes or until it no longer sticks when touched.
- Place the dough while still hot on a cotton cloth sprinkled with sugar.
- Spread a thin layer of jam over the dough and roll it up like a tight jelly roll.
- Repeat the process until you bake 8 doughs, fill them while still hot and roll them over the other rolls until you form a thick roll.
Mom Tips
You can replace the jelly with melted guava paste, a traditional and typical filling in the Northeast.
When serving, sprinkle with sugar and cut into very thin slices.
Serve with slices of black cheese.
