Preheat your oven to 180°C. In a saucepan, bring the apple juice with the sugar and vinegar to the boil, then reduce until you obtain a syrupy consistency. Then add the ketchup, orange zest, a pinch of salt and pepper, and mix well to obtain a balanced sauce.
Place the chicken in a spacious baking dish and brush it generously with this sauce, making sure not to forget the bottom for even cooking.
