Ingredients

  • 2 eggplants cut in half
  • 1 medium onion chopped
  • 2 crushed garlic cloves
  • 2 tablespoons of oil
  • 250 grams of ground beef
  • 1 ripe tomato
  • 1 chopped red pepper
  • 1 tablespoon of green scent
  • Black pepper to taste
  • Salt to taste
  • Coarsely grated mozzarella cheese
  • Oil

Preparation Mode

  1. Preheat the oven to 180ºC.
  2. Cut the eggplant lengthwise.
  3. With a knife, make superficial cuts in the pulp.
  4. Place in a pan, drizzle with olive oil and bake for 10 minutes.
  5. Let it cool and remove the pulp with a spoon, forming a canoe. Book.
  6. Saute the garlic and onion until wilted, in a frying pan with a little oil.
  7. Add the ground beef, green chilli, tomato, paprika and sauté until the meat is cooked.
  8. Add the eggplant pulp, season with pepper, salt and mix well.
  9. Stuff each half of the eggplants and sprinkle with cheese on top.
  10. Bake for 15 minutes or until the cheese melts.
  11. Serve hot.

Mom Tips

Approximate yield of 6 servings.

You can vary the filling by replacing the meat with chicken or even tuna.
