Ingredients

  • 1 pinch of salt
  • 4 excited

Apricot Sauce Ingredients

  • 250 grams of dried apricots
  • 1 cup (tea) sugar
  • 1 cup (tea) of water
  • 1 jar of apricot jam
  • 3 tablespoons of rum

Preparation Mode

  1. Soak the apricots in water for 1 hour.
  2. Wash the rice, place it in a pan and cover with boiling water and cook until it is soft.
  3. If necessary, drain the rice and return it to the pan.
  4. Add the milk and add 1 and ½ cups (tea) of sugar and salt.
  5. Cover the pan and let it cook over very low heat until the rice is well cooked and without excess liquid.
  6. Beat the egg yolks with the cream.
  7. Add the beaten egg yolks and butter to the rice
  8. Mix well and add the essence.
  9. Distribute in individual bowls or place in a well-shaped mold greased with butter and sprinkled with sugar.

How to prepare apricot sauce

  1. In a pan, over high heat, make a syrup (without stirring) at a low boil with the water and sugar.
  2. Add the apricots without the water and cook until they are transparent and soft.
  3. Drain, reserving the syrup and let it cool.
  4. Mix the apricot jam with the rum and 4 tablespoons of the reserved syrup.

The amount of boiling water to cook the rice should be twice the volume of rice in the pan.
