Who said that the galette des rois can only be enjoyed with cider? You can perfectly opt for a non-alcoholic drink, especially if the children share this very gourmet tradition. Several options are available to you, the main one being to find a good balance between the sugar in the cake and the drink. Here are all our classic or more unusual ideas to accompany a beautiful pancake!

Do you want to surprise the taste buds of your guests? So opt for orgeat syrup. It is not just for children, quite the contrary! Sometimes somewhat neglected, this syrup nevertheless has everything to please. Born in Ancient Greece, before spreading throughout the Mediterranean, it was originally prepared with barley (hence its name) and crushed almonds. Today it no longer contains barley, but mainly bitter almond flavors, water and sugar. Recognizable by its cream color and very refreshing flavor, it is used in the composition of famous cocktails such as the Mauresque (based on pastis). With its notes of orange blossom, orgeat syrup goes wonderfully with frangipane.

The simplest way to stay on a fruity note is to accompany the pancake with a good apple juice, which will perfectly counterbalance the buttery side of the pancake. Obviously choose a “pure juice”, obtained by simply pressing the fruit, without added sugar, and avoid juices made from concentrates. Recently, alcohol-free ciders, obtained by fermentation of apple juice, have been found in wine merchants and online. Less sweet than sparkling apple juice, they are perfect to accompany a frangipane pancake. You can also opt for a dealcoholized sparkling wine (made from white grapes)
