It’s not just at the end of the year that we can enjoy a good ham. Festivities, informal meetings, beautiful event get-togethers, and even for marketing. This dish makes approximately 20 servings. It is very appreciated, very tasty!
Ingredients
- 7 kg bone-in pork shank
- 1 and ½ liters of beer
- 3 liters of water
- 3 cups of white vinegar
- 1 tablespoon of chili pepper
- 1 tablespoon crushed garlic
- 1 tablespoon of coarse salt
- 2 tablespoons refined salt
- 2 sprigs of rosemary
Preparation Mode
- Place the ham in a large container and make holes with the help of a sharp knife.
- In a large pan, bring the beer, water, vinegar, pepper, garlic, salt and rosemary to a boil.
- Remove and let cool.
- Once cold, pour it over the ham, allowing the seasoning to enter the holes in the meat.
- Let it rest for 12 hours in the fridge.
- After this time, preheat the oven to low temperature.
- Remove the shank, drain and place in a large roasting pan.
- Place in the oven to bake for 7 hours, always basting the meat with seasoning.
- After this time, increase the oven temperature and bake for another 1 hour.
- Check that it is well cooked, remove and transfer to a platter.
- Decorate to taste and serve.
Mom Tips
If you prefer a very strong flavor, leave the ham resting in the seasoning for up to 2 days before roasting.
