Broccoli is generally one of the most popular cruciferous vegetables, particularly for children. We often tend to simply steam it, which admittedly lacks a bit of deliciousness. Some time ago, we already shared another recipe with you to highlight it: the broccoli smash, but this time, we are back with a new recipe that will surely delight you.

Pan-fried broccoli with anchovies and parmesan is a very simple dish, but with a perfect blend of ingredients that makes all its magic. It’s not hard to guess why it’s so good: anchovies and parmesan are umami, that fifth flavor that makes us salivate and manages to extract the gold from almost every ingredient it’s combined with. The dish has another ace up its sleeve, which is that it combines sautĂ©ing in the pan with a final touch from the oven, which gives us a delicious texture, a little crunchy, thus caramelizing the vegetable.

Cooking time: 45 mins

You need :

1 broccoli (or 2 medium) / 1 small red onion / 4 peeled garlic cloves / 6 anchovies in oil / 30 g parmesan / 1 lemon / 70 ml extra virgin olive oil / Ground black pepper /Salt

Steps :

  1. Cut the base of the broccoli stem and lightly peel the thicker stem until it appears white. Make a cut under the florets and cut this trunk into thin slices. Separate the small florets and cut the larger ones down the middle, also cutting the stem. Pick up any small pieces that come loose. Wash them and drain them well.
  2. Peel the onion and garlic cloves. Cut the first into julienne strips and mince the garlic. Preheat the oven to 200ÂşC and put the pan on the heat with 40 ml of olive oil, on medium-high power.
  3. When it is hot, add the broccoli, salt and cook, stirring occasionally so that it browns and caramelizes slightly on all sides. If the pan is small we will need to do this in two batches. After about 3-5 minutes, remove them.
  4. Wipe the pan with paper towels and add 30ml more oil. Heat over medium heat and cook the onion and garlic for about 3 to 5 minutes, until the onion begins to turn translucent. Add the anchovies and mash them so that they dissolve with the juice. When the garlic is golden, add the broccoli and stir well.
  5. Place the pan in the oven. After 10 minutes, stir very carefully to prevent the pieces from browning. Continue cooking for another 10 to 15 minutes. Add a little lemon juice and zest. Sprinkle with freshly grated parmesan and serve immediately.
