Peru? Again? Counting down to Christmas, how about preparing a delicious cod for supper?

Norwegian cod allows you to create wonderful dishes for Christmas and Easter. Prepare a few steps in advance and you will see how easy and quick it will be to put together this dish on the day. Check out the recipe tips!

Ingredients

  • 4 cod fillets from Norway
  • 3 ripe tomatoes
  • 2 onions
  • 2 garlic cloves
  • 200 ml of olive oil
  • 1 bay leaf
  • Chopped parsley or coriander (optional)
  • Wheat flour for breading
  • Mashed potatoes

Preparation mode

  1. Leave the cod to soak for 24 hours in the refrigerator, always changing the water at least 5 times during this period.
  2. Afterwards, carefully remove the skin and bones (if necessary) and place the steaks in a refractory dish.
  3. Preheat the oven to 180ĀŗC.
  4. Dip the tomatoes in boiling water and remove the skin.
  5. Cut the tomatoes in half, remove the seeds and then chop into thin slices.
  6. Peel the onions and garlic.
  7. Cut the onions into thin half-moons.
  8. Chop the garlic.
  9. Bread the cod fillets in wheat flour.
  10. Remove the excess and fry them in olive oil until golden.
  11. Remove and let drain on absorbent paper.
  12. In a little of the oil from the frying pan, fry the onions, garlic, tomatoes and bay leaf.
  13. Place the cod fillets in a Pyrex dish, leaving space on the sides.
  14. Place the stew on top.
  15. Fill the sides with mashed potatoes or spread the mashed potatoes over the entire dish.
  16. Bake for 20 minutes.
  17. Water from time to time with the sauce itself.
  18. Remove and serve sprinkled with parsley or coriander.

Mom Tips

Items 1 and 2 can be prepared in advance. Leave frozen. Then, when necessary, leave it to defrost in the refrigerator in advance.
