Ingredients

  • 1 kg of cubed beef
  • 2 cloves of minced garlic
  • Black pepper to taste
  • Salt to taste
  • 1 piece of chopped Calabrian sausage
  • 1 zucchini, cubed
  • 2 carrots, sliced
  • 2 diced potatoes
  • 1 chopped onion
  • 1 cube of beef broth
  • 4 tablespoons of oil
  • 3 tablespoons tomato paste
  • 4 and ½ cups (tea) of water
  • Chopped green onions to taste

Preparation Mode

  1. Season the meat with garlic, salt and pepper.
  2. In a pressure cooker, over medium heat, heat the oil.
  3. Fry the meat, pepperoni and onion until golden brown.
  4. Add the beef broth, extract and sauté for 2 minutes.
  5. Add the water, cover the pan and cook for 20 minutes, over medium heat, after the pressure starts.
  6. Turn off and let the pressure release naturally.
  7. Open the pan, add the zucchini, carrot, potato.
  8. Return to medium heat, add salt and cook, with the pan uncovered, until the vegetables are tender.
  9. Add more water if necessary.
  10. Transfer to a serving dish and sprinkle with parsley.

Mom’s Tips

If you prefer, you can add other vegetables of your choice.
