Ingredients
- 1 kg of cubed beef
- 2 cloves of minced garlic
- Black pepper to taste
- Salt to taste
- 1 piece of chopped Calabrian sausage
- 1 zucchini, cubed
- 2 carrots, sliced
- 2 diced potatoes
- 1 chopped onion
- 1 cube of beef broth
- 4 tablespoons of oil
- 3 tablespoons tomato paste
- 4 and ½ cups (tea) of water
- Chopped green onions to taste
Preparation Mode
- Season the meat with garlic, salt and pepper.
- In a pressure cooker, over medium heat, heat the oil.
- Fry the meat, pepperoni and onion until golden brown.
- Add the beef broth, extract and sauté for 2 minutes.
- Add the water, cover the pan and cook for 20 minutes, over medium heat, after the pressure starts.
- Turn off and let the pressure release naturally.
- Open the pan, add the zucchini, carrot, potato.
- Return to medium heat, add salt and cook, with the pan uncovered, until the vegetables are tender.
- Add more water if necessary.
- Transfer to a serving dish and sprinkle with parsley.
