Dough Ingredients
- 450 grams of wheat flour
- 2 tablespoons of sugar
- 60 grams of vegetable fat
- 1 ovo
- 100 ml of water
- 40 ml of Grappa
- Oil
Filling Ingredients
- 200 grams of fresh ricotta
- 50 ml fresh cream
- 2 tablespoons of sugar
- 30 ml of liquor of your choice
- Sicilian lemon zest
- Ground pistachios
Dough Preparation Method
- Using a mixer, beat all the ingredients until you obtain a homogeneous dough.
- Let it rest for 2 hours.
- On a smooth surface sprinkled with flour, roll out the dough using a rolling pin.
- Cut the dough into several circles with a round cutter (6 cm).
- Roll each circle into a cannoli tube.
- Close tightly, forcing with your hand.
- In a pan, over medium heat, heat oil and gradually fry the cannoli until they are golden.
Filling preparation method
- In a bowl, place the first 5 ingredients and mix well.
- Place the mixture in a pastry bag and fill the cannoli.
- Roll the tops of the cannoli in the pistachios.

If you don’t have a cutter, use the edge of a glass to cut the dough.
