Dough Ingredients
- 70 grams of wheat flour
- 60 grams of sugar
- 2 tablespoons cocoa powder
- ½ teaspoon of salt
- 4 eggs
- 1 teaspoon of baking powder
Filling and Covering Ingredients
- 250 grams of sanitized and chopped strawberries
- 250 grams of well-chilled fresh cream
- 100 grams of semi-sweet chocolate
- 80 grams of milk chocolate
Preparation Mode
- Grease and flour a 30 x 22 cm rectangular pan.
- Preheat the oven to 205ºC.
- Sift the flour and mix well with the cocoa, sugar and baking powder. Book.
- Using a mixer, beat the eggs with the salt for 10 minutes at high speed.
- Reduce the speed to low and beat for another 1 to 2 minutes.
- Gently using a spatula, gradually incorporate the reserved dry ingredients.
- Pour into the pan and bake for approximately 12 minutes or until cooked.
- Unmold while still hot, without filling, onto a cloth sprinkled with sugar and roll tightly.
Method of Preparation Filling and Covering
- Melt the two types of chocolate in a bain-marie.
- Using a mixer, beat the cream until whipped cream.
- Add the melted chocolate, mix well and chill.
Assembly
- Reserve part of the filling.
- Carefully roll out the roulade dough and spread the filling.
- Distribute the chopped strawberries over the top.
- Roll up again and cut both ends of the roll.
- Spread the frosting.
- decorate with strawberries.
Mom Tips
Don’t overbake the dough so it doesn’t dry out.
Do not over-beat the cream or it will turn into butter.
Another topping option is to coat the roulade with semi-sweet chocolate and decorate with chocolate shavings and strawberries. Once ready, sprinkle with icing sugar.
You can replace strawberries, when they are out of season, with seedless grapes in the filling and topping.
