A typical American dessert is the sweet “sandwich”. A sure hit!

Ingredients Dough

  • 200 grams of wheat flour
  • 150 grams of sugar
  • 80 grams of cocoa powder
  • 75 grams of melted unsalted butter
  • 125 grams of natural yogurt
  • ¼ teaspoon vanilla extract
  • 25 ml of milk
  • ¾ teaspoon baking soda
  • ¼ teaspoon baking powder
  • 1 large egg

Ingredients Creamy Marshmallow (optional)

  • 2 egg whites
  • 1 cup (tea) of sugar
  • 2 tablespoons of water
  • 1 teaspoon vanilla extract
  • 2 tablespoons of honey

Creamy Marshmallow Preparation Method

  1. In a heatproof bowl, mix all ingredients.
  2. Place in a bain-marie and beat continuously for approximately 7 minutes or until thickened, creamy and consistent.
  3. Remove from the bain-marie and beat for another 1 minute.
  4. Allow to cool completely before using.

Ingredients Filling

  • 280 grams of powdered sugar
  • 170 grams of unsalted butter at room temperature
  • 220 grams of creamy marshmallow

Preparation Mode

  1. Line two large rectangular baking sheets with parchment paper.
  2. Preheat the oven to 170ºC.
  3. Sift the dry ingredients and set aside.
  4. In a mixer, on low speed, beat the egg with the sugar until you get a fluffy cream.
  5. Add the mixture of milk, yogurt and vanilla extract to this cream.
  6. Add the melted butter and beat on medium speed until the mixture is smooth.
  7. Add half of the reserved dry ingredients and beat on low speed until well combined.
  8. Add the remaining dry ingredients and beat again until smooth.
  9. Refrigerate for 30 minutes.
  10. Remove and shape into balls 3-5 cm in diameter.
  11. Distribute on the baking trays, leaving 2-3 cm of space between them.
  12. Bake for approximately 10 to 14 minutes or until lightly browned and firm to the touch.
  13. Remove them from the baking sheet and transfer them to a wire rack to cool.
  14. Once they are completely cold, fill them.

Preparation Method Filling

  1. In a mixer, on low speed, beat the butter and sugar until well mixed.
  2. Increase the mixer speed, add the marshmallow and beat until you get a light and fluffy cream.
  3. Refrigerate for 30 minutes to set.
  4. Using a spoonful of cream, assemble the woopies.

Mom’s Tips

The above recipe for creamy marshmallow is optional because you can find it ready-made in the ice cream section of good supermarkets.
