Crystallized Banana Candy
Ingredients
- 24 ripe dwarf bananas
- 1 kg of crystal sugar
- 1 tablespoon of butter
- 1 cup (tea) of lemon juice
- Crystal sugar
Preparation Mode
- Get a 30 cm x 22 cm pan. Set aside.
- Peel the bananas and blend them in the food processor.
- Place in a pan and add sugar.
- Mix with a spoon, add the butter and lemon juice.
- Cook over low heat, stirring constantly, until it comes away from the pan.
- Pour into the mold and let it rest for 24 hours.
- Cut into desired shape and roll in granulated sugar.
Crystallized sweet potato
Ingredients
- 1 kg of peeled, sliced sweet potato
- Juice of 1 lemon
- 1 teaspoon grated lemon peel
- 1 packet of unflavored red gelatin powder
- 4 cups (tea) of sugar
- 1 and ½ cup (tea) of hot water
- Crystal sugar
Preparation Mode
- Grease a medium-sized baking dish. Set aside.
- Place the potato in water and lemon juice for 10 minutes.
- Drain, place in a pan, cover with water and cook over medium heat until soft but not falling apart.
- Drain, add the sugar, hot water, lemon zest and cook until the sugar melts and forms a syrup.
- Remove and blend in a blender, little by little, until you obtain a dough and return to the pan.
- Prepare the gelatin according to the instructions on the package, but do not dissolve it.
- Add the gelatin to the potato and cook over low heat until completely dissolved and you get a homogeneous mixture.
- Place in the reserved baking dish, spread evenly and refrigerate for at least 3 hours.
- Remove, cut into small squares and coat in granulated sugar.
- Serve.
Candied Fig and Fig in Syrup
Ingredients
- 1 kg of green figs
- 3 kg of sugar
- Water
Preparation Mode
- Clean the fruit well.
- Heat plenty of water.
- In a bowl, place the fig with water and 5% concentration of chlorine.
- The proportion is 10 ml of chlorine to 10 liters of water.
- Using a knife, scrape each fruit and then make a cross-shaped cut.
- In a copper pot with hot water, place the figs, cover and cook until boiling.
- Repeat this operation 3 times until the figs are cooked and soft.
- Drain and set aside.
Syrup Preparation Method
- Dissolve 2 kg of sugar with 2 liters of water over heat.
- Add the figs, remove from the heat and let stand until the next day.
- Heat the candy covered with the cloth and then drain the syrup.
- Concentrate the syrup until it reaches the candy stage.
- To crystallize, make another syrup at the candy stage with 1 kg of sugar and 1 liter of water.
- Add a portion of figs and shake the pan.
- When the syrup is white, tilt the pan a little, collect the figs in the dry corner of the pan and soak the figs in the syrup for about 10 minutes.
- Drain and place the figs, separate from each other, on a sieve to dry.
- Once dry, package and decorate as desired.
Mom’s Tips
Yield of crystallized banana candy: approximately 15 servings.
Yield of candied sweet potatoes: approximately 25 units.
Yield of candied and crystallized figs: approximately 10 servings.
