Crystallized Banana Candy

Ingredients

  • 24 ripe dwarf bananas
  • 1 kg of crystal sugar
  • 1 tablespoon of butter
  • 1 cup (tea) of lemon juice
  • Crystal sugar

Preparation Mode

  1. Get a 30 cm x 22 cm pan. Set aside.
  2. Peel the bananas and blend them in the food processor.
  3. Place in a pan and add sugar.
  4. Mix with a spoon, add the butter and lemon juice.
  5. Cook over low heat, stirring constantly, until it comes away from the pan.
  6. Pour into the mold and let it rest for 24 hours.
  7. Cut into desired shape and roll in granulated sugar.

Crystallized sweet potato

Ingredients

  • 1 kg of peeled, sliced ​​sweet potato
  • Juice of 1 lemon
  • 1 teaspoon grated lemon peel
  • 1 packet of unflavored red gelatin powder
  • 4 cups (tea) of sugar
  • 1 and ½ cup (tea) of hot water
  • Crystal sugar

Preparation Mode

  1. Grease a medium-sized baking dish. Set aside.
  2. Place the potato in water and lemon juice for 10 minutes.
  3. Drain, place in a pan, cover with water and cook over medium heat until soft but not falling apart.
  4. Drain, add the sugar, hot water, lemon zest and cook until the sugar melts and forms a syrup.
  5. Remove and blend in a blender, little by little, until you obtain a dough and return to the pan.
  6. Prepare the gelatin according to the instructions on the package, but do not dissolve it.
  7. Add the gelatin to the potato and cook over low heat until completely dissolved and you get a homogeneous mixture.
  8. Place in the reserved baking dish, spread evenly and refrigerate for at least 3 hours.
  9. Remove, cut into small squares and coat in granulated sugar.
  10. Serve.

Candied Fig and Fig in Syrup

Ingredients

  • 1 kg of green figs
  • 3 kg of sugar
  • Water

Preparation Mode

  1. Clean the fruit well.
  2. Heat plenty of water.
  3. In a bowl, place the fig with water and 5% concentration of chlorine.
  4. The proportion is 10 ml of chlorine to 10 liters of water.
  5. Using a knife, scrape each fruit and then make a cross-shaped cut.
  6. In a copper pot with hot water, place the figs, cover and cook until boiling.
  7. Repeat this operation 3 times until the figs are cooked and soft.
  8. Drain and set aside.

Syrup Preparation Method

  1. Dissolve 2 kg of sugar with 2 liters of water over heat.
  2. Add the figs, remove from the heat and let stand until the next day.
  3. Heat the candy covered with the cloth and then drain the syrup.
  4. Concentrate the syrup until it reaches the candy stage.
  5. To crystallize, make another syrup at the candy stage with 1 kg of sugar and 1 liter of water.
  6. Add a portion of figs and shake the pan.
  7. When the syrup is white, tilt the pan a little, collect the figs in the dry corner of the pan and soak the figs in the syrup for about 10 minutes.
  8. Drain and place the figs, separate from each other, on a sieve to dry.
  9. Once dry, package and decorate as desired.

Mom’s Tips

Yield of crystallized banana candy: approximately 15 servings.

Yield of candied sweet potatoes: approximately 25 units.

Yield of candied and crystallized figs: approximately 10 servings.
