Bánh Tráng Nướng means “grilled rice pancake”. Spreading the onions evenly over the pancake will act as a barrier to the egg and prevent it from getting soggy.

Serve these Vietnamese pizzas with sriracha (a Thai hot sauce made with chili peppers, vinegar, garlic, sugar, and salt) and, if desired, mayonnaise. For a fresh touch, sprinkle the flatbreads with a little chopped cilantro before serving.
