Drip Cake is a trend that is slowly arriving and replacing Naked Cake. The cake is decorated with the icing (or syrup), which is carefully poured over the entire cake, creating a dripping effect. A relaxed and cheerful cake that goes with any event.

Champagne Cake

Ingredients

  • 350 grams of wheat flour
  • 20 grams of cornstarch
  • 400 grams of sugar
  • 240 grams of unsalted butter
  • 4 large eggs
  • 2 teaspoons of champagne essence
  • 1 pinch of salt
  • 1 dessert spoon of chemical baking powder
  • 250 ml of champagne
  • 100 grams of toasted flaked almonds

Preparation Mode

  1. Prepare a 35-diameter round pan by greasing and flouring it.
  2. Preheat the oven to 180ºC.
  3. Sift the wheat flour and starch together. Reserve.
  4. Using a mixer, at medium speed, beat the butter and sugar until you get a fluffy, whitish cream.
  5. Reduce the speed and add the eggs, one at a time, beating well after each addition.
  6. Add the essence, salt and yeast.
  7. Alternately, add the reserved wheat flour and champagne and mix well.
  8. Turn off the appliance and add the almonds.
  9. Pour the batter into the pan and bake for approximately 35 minutes, or until a toothpick inserted into the batter comes out clean.
  10. When cool, cut the cake into two layers.

Filling Ingredients

  • 2 cans of condensed milk
  • 2 cans of cream
  • 100 grams of white chocolate
  • 20 grams of butter

Filling preparation method

  1. In a thick-bottomed pan, mix all the ingredients and place over low heat.
  2. Stir constantly until the cream comes out of the pan.

Ingredients Coverage

  • Chantilly
  • Melted fractionated chocolate
  • Fruits to taste

Assembly

  1. On a tray, place a layer of cake, one of filling and one of cake.
  2. Repeat the process with the other cakes (tiered cake).
  3. Using a spatula, spread the whipped cream on the sides and surface of the cake.
  4. Then, pour the melted chocolate around the edges of the cake, as seen in the photo.
  5. Finish by decorating the cake with fruit.

Mom Tips

To make the cake in the photo you will need three dough recipes. You will use one and a half cakes on the first floor and the rest on the second floor. Shapes measuring 35 cm and 25 cm in diameter.

Remember that tiered cakes must have stakes. O staking is an assembly technique that allows you to obtain cakes with more than one floor. It serves to prevent the upper cake from sinking onto the lower one.
