It doesn’t hurt to have a little thought when making that favorite salad. It looks more appetizing!!

Ingredients

  • 6 medium potatoes without skin
  • 1 cup cooked broccoli florets
  • 1 cup cooked and chopped green beans
  • 1 cup diced cooked carrot
  • ½ cup drained green corn
  • 1 cup chopped palm hearts
  • ½ cup drained peas
  • 1 cup mayonnaise
  • Boiled eggs
  • Black pepper to taste
  • Salt to taste
  • Olives
  • Oil

Preparation Mode

  1. In a pan, over medium heat, cook the potato in salted water for approximately 20 minutes or until softened. It should be cooked but firm.
  2. Remove, let cool slightly and chop into cubes
  3. Add mayonnaise, pepper, salt and mix gently.
  4. In a bowl, mix the broccoli, carrot, corn, hearts of palm and green beans.
  5. Add the potato mixture and mix gently.
  6. With olive oil, grease a mold of your choice.
  7. Add the salad and press gently.
  8. Refrigerate for at least 2 hours.
  9. Unmold and decorate with boiled eggs, olives and parsley sprigs

Mom Tips

Approximate yield of 8 servings.

To form, you can use a medium-sized ramekin, a pan with a central hole, a bread pan or another pan of your choice.
