Ingredients

  • 1 kg of potatoes
  • 100 grams of diced bacon
  • 1 onion, diced
  • 4 tablespoons white wine vinegar
  • White pepper to taste

  • 2 tablespoons mustard
  • 1 teaspoon sugar
  • 3 tablespoons of oil
  • Green smell to taste

Preparation Mode

  1. In a pan with water, cook the potatoes with their skins for approximately 30 minutes.
  2. Remove the skins and cut into slices or wedges.
  3. In a frying pan, fry the bacon, remove and reserve the fat.
  4. Add the vinegar, pepper, salt, sugar and onion to this fat and let it boil.
  5. Add the reserved bacon, water, mustard and oil.
  6. Place the potatoes in a baking dish.
  7. Pour the sauce over the top and sprinkle with the parsley.
  8. Serve.

Instead of green onions, you can use chopped chives.

Before cooking the potatoes, make cuts in the skin. This will make them easier to peel once they are cooked.
