In flan, fritters or gratin, everyone agrees on zucchini. What if we strayed from the classic recipes to spice up this return from vacation? On the menu: a delicious zucchini caviar garnished with curry, fresh mint and lime imagined by the chef and former Top Chef candidate, Ruben Sarfati. A little taste bomb that should remind you of your past travels. To finish convincing you: our readers gave it the very nice score of 4/5. So let’s roll up our sleeves and let’s go!
Preparation time: 10 mins
As a starter or an aperitif or as an accompaniment to a nice piece of meat, this caviar can be served (almost) anywhere. Spread on a piece of fresh bread rubbed with garlic and just toasted, used as a spread in which to dip carrot sticks, the possibilities are endless! You can even serve it in verrines with a little feta, beaten ricotta or fresh goat cheese on top.
