Fresh and homemade, these cookies are very tasty and meet the needs of those with gluten restrictions.

Ingredients

  • 150 grams of brown rice flour
  • 100 grams of sugar
  • 75 grams of light brown sugar
  • 75 grams of butter
  • 1 tablespoon cocoa powder
  • ½ teaspoon baking soda
  • 1 beaten egg
  • Gluten Free Dark Chocolate Drops

Preparation Mode

  1. Reserve the chocolate drops.
  2. Line a large baking sheet with parchment paper. Set aside.
  3. Preheat the oven to 180ºC.
  4. In a food processor or by hand, beat the remaining ingredients until you obtain a homogeneous mixture.
  5. Add the drops and, with your hands, form the dough into a ball.
  6. Shape the cookies and place them on the baking sheet, leaving space between them.
  7. Press them gently with the help of a fork.
  8. Bake for approximately 10 minutes.
  9. Remove the baking sheet from the oven, wait a few minutes (approximately 10) for the cookies to solidify.
  10. Unmold.

Mom’s Tips

Please note: Among other uses, one of the functions of baking soda is to add volume and lightness to the dough, making the preparations rise.

Yields approximately 30 servings.
