Ingredients
- 1 and ½ cups (tea) of rice flour
- ½ cup (tea) of sweet cassava starch
- ½ cup (tea) of cornmeal
- ½ cup (tea) of coconut milk
- 4 tablespoons of olive oil
- 1 tablespoon of demerara sugar
- 1 teaspoon sea salt
- 1 tablespoon of dry biological yeast
- 4 eggs
Preparation Mode
- Set aside the yeast.
- Dilute the coconut milk in 1 cup of water. Set aside.
- Grease a loaf pan with olive oil and rice flour.
- Preheat the oven to medium temperature.
- In a blender, except for the yeast, beat all the other ingredients (including the dissolved coconut milk).
- Add the reserved yeast and beat enough to mix well.
- Pour the batter into the pan.
- Cover and let rise until doubled in size.
- Bake for approximately 30 minutes or until fully cooked.
Mom’s Tips
Demerara sugar contains no additives and has light brown grains with high nutritional values. It is a sugar that does not alter the flavor or color of preparations. It is found together with oat flour in health food stores.
