Ingredients
- 1 kg of potatoes
- 3 cute
- 1 tablespoon of butter
- 3 tablespoons cornstarch
- Salt to taste
- Oil
Ingredients for Breading
- 2 cups (tea) of breadcrumbs
- 2 beaten eggs
Ingredients Filling and Topping (optional)
- Fried diced bacon
- Cream cheese
Preparation Mode
- Pierce the potatoes with a fork.
- In a microwave-safe container, place half of the potatoes.
- Microwave, without water, on high power for approximately 10 minutes.
- Then check if the potatoes are soft.
- If necessary, return to the microwave for a few more minutes.
- Repeat the operation until you have finished the potatoes.
- In a bowl, mash the potatoes while they are still hot.
- Add the butter, cornstarch, egg yolks and salt.
- Mix and let cool completely.
- Shape into balls, dip in beaten eggs and then in breadcrumbs.
- Gradually fry in hot oil until golden brown.
- Drain on paper towels.
- Serve immediately.
Mom’s Tips
If you prefer, fill it with fried bacon. You can also serve it topped with warmed cream cheese.
