An exceptional dish, foie gras is almost unavoidable at Christmas. But for ethical reasons, for budgetary reasons or simply to test new flavors, we can also be tempted by “fake fat”! In recent years, vegetable foie gras recipes have multiplied, particularly on social networks. On his Instagram account “The fox and the grapes“, Andréa shared her recipe based on chickpeas, mushrooms and miso. A foie gras larger than life but without the slightest ingredient of animal origin. And the illusion is perfect!

In this recipe, chickpeas are the main ingredient. They are the ones that will serve as the basis and replace the liver. You can also use cashew nuts, which provide roundness and good consistency, but also silken tofu.

The mushrooms bring a forest note and happily enhance the flavor of the faux foie gras, as does the miso (soy paste).

Seasoning is also very important: salt, pepper, spices and alcohol will bring a touch of acidity, but also roundness.

To imitate the fat on top, margarine (without milk) is a good option but you can also use deodorized coconut oil (or a neutral oil) or melted cocoa butter.
