Dough Ingredients

  • 2 and ½ cups (tea) of wheat flour
  • 2 tablespoons olive oil
  • 1 tablet of fresh organic yeast
  • 1 cup (tea) of warm water
  • 1 teaspoon of salt

Filling Ingredients

  • ½ cup grated lean ham
  • 1 cup grated light mozzarella cheese
  • 4 tablespoons chopped green olives
  • 1 beaten egg

Dough Preparation Method

  1. In a bowl, mix the flour and oil.
  2. Add the yeast dissolved in the water and salt.
  3. Mix with the help of a spoon.
  4. Transfer the mixture to a surface sprinkled with flour.
  5. Work the dough until it obtains a smooth and uniform consistency.
  6. Form into a ball, cover and let rest for 30 minutes.
  7. Divide the dough into 6 parts.

Calzones Assembly

  1. Grease a baking tray with olive oil and set aside.
  2. Preheat the oven to 180ºC.
  3. Mix the filling ingredients. Reserve.
  4. Roll out each part of the dough into 6 discs.
  5. Distribute the filling in each of them and fold in half.
  6. Press the edges well, brush with egg and place the calzones on the baking tray.
  7. Bake for approximately 25 minutes.
