With the Mise en place (MEP) prepared you will optimize your time and, consequently, your recipe will be ready in the blink of an eye.

Set up is a French expression that means to put in place, to put in order.

Adopt MEP in the kitchen and find that everything will become easier when preparing your favorite dishes.

Mise en place is the most important part in the kitchen; combines organization with practicality.

Have you noticed the culinarians’ bench, courses and especially on TV? All ingredients and utensils are separated and ready to start preparing a dish. There is the organization and practicality that will avoid mess, dirt, interruption, delays, unforeseen events and consequently stress.

So, let’s adopt MEP to prepare a certain recipe

  1. The kitchen must be in order, that is, clean and with everything in its proper place.
  2. Check the chosen recipe.
  3. How long does it take to prepare your recipe? Should the hour, minutes or part of it be prepared the day before?
  4. Do we have all the ingredients?
  5. Remove ingredients that will be used from your pantry or cupboard.
  6. Also separate all the utensils you will use (sieve, whisk, pan/baking tray, etc.)
  7. Prepare the mixer or blender.
  8. Check what your recipe calls for and leave it ready, such as sifted dry ingredients, sanitized fruits, prepared lemon juice, crushed, cut or grated ingredients, peeled vegetables, etc.
  9. There are ingredients you will need to weigh. Weigh and separate into small bowls.
  10. Place the separate ingredients in order of use.
  11. Example: if butter and sugar will be the first ingredients to be used, leave them first or right in front of you. This facilitates identification and quick handling.
  12. For cakes, leave the pan already greased and floured if applicable.
  13. For puddings, leave the mold already caramelized if necessary.
  14. Oven: when requested, preheat the oven for 15 minutes before using it. This avoids undercooked and raw foods.

Orange Cake with Ganache

Dough Ingredients

  • 3 cups (tea) of wheat flour
  • 1 and ½ cup (tea) sugar
  • 1 cup (tea) of orange juice
  • 3 tablespoons margarine
  • 1 tablespoon orange peel zest
  • 1 tablespoon of baking powder
  • 4 eggs

Ganache Ingredients

  • 500 grams of chopped semi-sweet chocolate
  • 2 boxes of cream

Preparation method with MEP

  1. Grease and flour a 30 cm diameter pan. Book.
  2. Check which dish you will mount the cake on.
  3. Preheat the oven to medium temperature.
  4. Remove the blender from the cabinet.
  5. Prepare the orange juice. Book.
  6. Prepare the orange zest. Book.
  7. Pique o chocolate. Reserve.
  8. Prepare the chocolate shavings and thin orange slices. Book.
  9. Heat the water in the bain-marie. The ideal is the bain-marie. It’s very easy to burn chocolate in the microwave.
  10. In a blender, beat the eggs, sugar, margarine, orange juice and flour until you obtain a creamy mixture.
  11. Add the zest, yeast and mix.
  12. Pour into the pan and bake for approximately 35 minutes.
  13. Retire e reserve.

How to prepare ganache

Melt the chocolate in a bain-marie, add the cream and mix well until you obtain a homogeneous cream.

Cake Assembly

  1. Unmold the cold cake and cut it in half.
  2. Fill the cake by spreading half of the ganache.
  3. Cover with the other dough and cover the cake with the remaining ganache.
  4. Decorate with chocolate shavings and thin orange slices.

Mom Tips

If you prefer, you can make the cake in smaller-sized pans than indicated.

In approximately 1 hour the cake will be ready.
