Minestrone is a delicious recipe to warm you up on cold nights.
Ingredients
- 1 cup (tea) of white beans
- 3 liters of vegetable broth
- 4 tablespoons of olive oil
- 200 grams of Hail Mary or shell pasta
- 1 clove of minced garlic
- 3 tomatoes, skinned and seeded
- 1 onion, diced
- 1 chopped celery stalk
- 3 potatoes, diced
- 3 carrots, diced
- Black pepper to taste
- Salt to taste
- Chopped parsley to taste
- Grated Parmesan cheese
Preparation Mode
- Soak the beans in water overnight.
- Cook the beans in the vegetable broth until soft. Set aside.
- In a pan, heat the olive oil and sauté the onion and garlic.
- Add the tomato, celery, carrot and potato.
- Season with salt and pepper and let it sauté for about two minutes.
- Add a little of the bean water and let it cook for 2 minutes after it starts to boil.
- Add the rest of the broth and, when it boils, add the pasta and cook. al dente.
- Turn off the heat and sprinkle with parsley.
- Serve sprinkled with cheese.
Mom’s Tips
It is excellent if you add slices of smoked sausage to the minestrone.
