There is nothing better than making homemade spring rolls. The problem ? Many are mixed to take the plunge and make this preparation themselves. Indeed, the folding of the spring rolls often seems a little too complicated. It’s a mistake.

Contrary to popular belief, there is nothing very difficult. You just have to take your time and once you have taken the helping hand, it will be even faster. Precisely to help you in this achievement, chef Christophe unveiled his method, to fold a NEM in 1 minute chrono. Up to you !

Be aware that there are round or rectangular rice leaves. It’s up to you to choose, the format you prefer. In his video, the chief Christophe uses round leaves to make his spring rolls

The first thing to do is therefore to moisten the leaves by plunging them into a lukewarm water container. Check that the whole sheet is well covered with water. Then you can place them on a damp cloth. “The idea is that the leaf is relaxing quietly” specifies the chief.

Once your leaf is very flexible, you will be able to put your stuffing.

Take your stuffing using a spoon and place it ⅔ of your leaf then, you lift the bottom of your dough to fold it down and paste it. You fold the edges to the middle. You will tighten everything and then all you have to do is roll your nem.

It is important to have a NEM which is well closed on each side and which is not going to open. Once your spring rolls have been shaped, be careful to place them gently. “I will put them on the welding side”. And then you can put them in frying.
