Don’t neglect okra! It’s easy to do without the drool. Know that it fights bad cholesterol and strengthens the immune system.

Ingredients

  • 200 grams of okra
  • 1 small yellow pepper
  • 1 medium onion, sliced
  • 50 grams of black olives in flakes
  • 150 grams of fresh ricotta
  • 3 tablespoons of vinegar
  • 3 tablespoons of olive oil
  • Juice of ½ lemon
  • Salt to taste

Preparation Mode

  1. Clean the okra well. Cut both ends and soak in water with lemon juice for 5 minutes.
  2. Drain and, in a pan with water and salt, cook the okra for 10 minutes.
  3. Drain, let cool and then cut each one into slices or lengthwise.
  4. Boil the onion slices, drain and set aside.
  5. Coarsely crumble the ricotta and set aside.
  6. Bake the peppers in the oven on high for 10 minutes.
  7. Remove the skin, seeds and cut into strips. Book.
  8. In a salad bowl, mix the okra, ricotta, paprika, olives and onion.
  9. Season with vinegar, oil and salt.

Mom Tips

Approximate yield of 4 servings.

If you prefer, use vinegar instead of lemon to remove the drool from the okra.

You can enhance the salad with other vegetables of your choice.
