Don’t neglect okra! It’s easy to do without the drool. Know that it fights bad cholesterol and strengthens the immune system.
Ingredients
- 200 grams of okra
- 1 small yellow pepper
- 1 medium onion, sliced
- 50 grams of black olives in flakes
- 150 grams of fresh ricotta
- 3 tablespoons of vinegar
- 3 tablespoons of olive oil
- Juice of ½ lemon
- Salt to taste
Preparation Mode
- Clean the okra well. Cut both ends and soak in water with lemon juice for 5 minutes.
- Drain and, in a pan with water and salt, cook the okra for 10 minutes.
- Drain, let cool and then cut each one into slices or lengthwise.
- Boil the onion slices, drain and set aside.
- Coarsely crumble the ricotta and set aside.
- Bake the peppers in the oven on high for 10 minutes.
- Remove the skin, seeds and cut into strips. Book.
- In a salad bowl, mix the okra, ricotta, paprika, olives and onion.
- Season with vinegar, oil and salt.
Mom Tips
Approximate yield of 4 servings.
If you prefer, use vinegar instead of lemon to remove the drool from the okra.
You can enhance the salad with other vegetables of your choice.
