For a snack with friends or family, a cake with a special flavor. Delicious!

Ingredients

  • 2 cups (tea) of wheat flour
  • 2/3 cup (tea) of sugar
  • 2/3 cup (tea) of milk
  • 2/3 cup (tea) of walnuts
  • 1 tablespoon of oil
  • 1 teaspoon oil
  • 1 ovo
  • 2 teaspoons baking powder
  • peel of 3 medium-sized oranges, chopped
  • ¾ cup (tea) of sugar

Preparation Mode

  1. Grease a 9″ x 5″ x 3″ loaf pan or other pan of your choice. Set aside.
  2. In a blender, place the orange peel, 2/3 cup (tea) of water and blend at medium speed until the peel is well chopped.
  3. Pour the mixture into a pan, add ¾ cup (tea) of sugar and bring to the boil.
  4. Cook, stirring constantly, until thickened (about 10 minutes).
  5. Remove and let cool.
  6. In a large bowl (with a mixer), place the wheat flour, the orange peel mixture, 2/3 cup (tea) of sugar, the oil, the milk, the egg, the yeast and the walnut.
  7. Beat with the mixer at high speed for 1 minute or until you obtain a very fluffy dough.
  8. Pour into the pan, place in a moderate oven (170ºC) and bake for approximately 50 minutes or until a toothpick inserted into the center of the cake comes out dry.
  9. Remove from the oven, let cool in the pan for about 10 minutes and unmold.

Mom’s Tips

Orange peel; approximately = 1 and ½ cups.

You can replace the walnuts with Brazil nuts.

To make the cake in a larger pan, double the recipe.

Yields approximately 20 servings.
