Ossobuco; a simple homemade dish, full of flavor and very tasty. Try it!

Ingredients

  • 6 pieces of ossobuco
  • 1 teaspoon black pepper
  • 3 teaspoons of salt
  • Crushed garlic to taste
  • 1 cup (tea) wheat flour
  • 3 tablespoons of butter
  • 1 cup of white wine
  • 1 and ½ cup (tea) of water
  • Zest of the peel of 2 lemons
  • Juice of 2 lemons
  • Ready tomato sauce
  • 2 tablespoons chopped parsley

Preparation Mode

  1. Wash the osso buco well and dry with paper towel.
  2. Season with pepper, salt and garlic.
  3. Dip in flour.
  4. In a frying pan, over high heat, brown the meat in butter.
  5. Add the wine and let it evaporate over medium heat.
  6. Reduce heat to low, add ½ cup of water and cook for approximately 30 minutes.
  7. Little by little, add the rest of the water.
  8. Add the lemon juice and zest.
  9. Heat the tomato sauce.
  10. Transfer to a baking dish, cover with tomato sauce and sprinkle with parsley.

Mom Tips

Ossobuco is also known as chambaril.

When buying meat, choose meat from the central part of the beef leg, where the bone is smaller and the amount of marrow is greater.

The ossobuco pieces must be a maximum of three centimeters in height and weigh around 250 grams.
