1st Option

Ingredients

  • 1 picanha of 1 kg
  • 1 cup coarse salt
  • 1 tablespoon vegetable oil

Preparation Mode

  1. Clean the meat of excess ribs, including the membrane that covers part of the piece on the side opposite to the fat.
  2. Leave only the main fat, which should not be too thick.
  3. Massage the meat with the oil.
  4. Place the meat in a roasting pan, supported by balls made of aluminum foil, with the fat side facing up.
  5. Cover with salt and leave to rest at room temperature.
  6. Heat the oven to 220ºC.
  7. Cover the pan with aluminum foil.
  8. Place the meat in the already heated oven and bake for 40 minutes.
  9. Remove the aluminum foil and bake for approximately another 10 minutes.

Mom Tips

Ideally, the meat should be brown on the outside and pink on the inside, tender and juicy.

If you prefer it more roasted, return to the oven for as long as you think necessary until it reaches its ideal tasting point.

The ideal point of the meat: if, when you poke it with a fork, it is still bleeding, it is undercooked. It will be done if, when you poke it, water comes out.

2nd Option

Ingredients

  • 1 cup (tea) coarse salt
  • 1 piece of picanha weighing less than 1 kg

Preparation Mode

  1. Rub coarse salt all over the meat.
  2. Place a baking tray with water on the bottom rack of the oven.
  3. Place the meat directly on the top rack of the oven.
  4. At 250ºC, bake for 45 minutes, or until the picanha is tender.
  5. Remove from the oven, shake off excess salt and cut into slices.
  6. Serve then.

Mom Tips

Approximate yield of 4 servings.

Do not substitute coarse salt for fine salt.

Coarse salt gives the meat more flavor and does not penetrate the meat. Fine salt, which in addition to oversalting, can also cause the meat to dehydrate, making it hard instead of juicy and tender.
