Preserved Pine Nuts

Ingredients

  • 1 cup cooked and peeled pine nuts
  • ½ cup (tea) vinegar
  • ½ cup (tea) of water
  • ½ teaspoon of salt
  • 1 clove of garlic
  • 10 whole black peppercorns
  • 1 bay leaf
  • Thyme sprigs
  • Rosemary branches

Preparation Mode

  1. Place the pine nuts in a sterilized jar, add the garlic and set aside.
  2. Cut a disc of baking paper with a diameter slightly larger than the mouth of the pot and set aside.
  3. In a pan, over high heat, bring the water, vinegar, salt, pepper, bay leaf, thyme and rosemary to a boil.
  4. Remove from heat.
  5. Pour the mixture into the reserved jar of pine nuts until it comes within one cm of the mouth of the jar.
  6. Moisten the baking paper disc with alcohol, place it over the opening of the pot and cover, closing tightly.
  7. Store the preserves in a cool, protected place for at least 5 days before serving.

You can serve pine nuts cut into slices to complement dishes on your menu such as salads, stews and others.

Ingredients

  • 1 kg of cooked and peeled pine nuts
  • 2 cups of milk (tea)
  • 2 cups of sugar (tea)
  • 6 cloves
  • 2 pieces of cinnamon stick
  • 1 teaspoon vanilla essence
  • 2 tablespoons Cointreau liqueur
  • Milk chocolate topping
  • Cocoa powder

Preparation Mode

  1. In a processor, place the pine nuts, add the milk and blend until you obtain a thick puree.
  2. Place the puree in a pan, add the sugar, cloves, cinnamon and place over medium heat.
  3. Cook, stirring constantly with a wooden spoon, until the candy no longer sticks to the bottom of the pan.
  4. Remove the cloves and cinnamon from the jam.
  5. Add the essence, mix and cook until it thickens.
  6. Remove from heat, add the liquor, mix well and let it cool.
  7. Roll into balls and let dry for 2 hours.
  8. Melt the chocolate.
  9. Dip the balls in the cold, melted chocolate and let them become almost dry.
  10. Dip the truffles in cocoa powder, wrapping them well.
  11. Place in paper cups lined with cellophane mats.
  12. Store the truffles in the refrigerator until ready to serve.

How to cook pine nuts: Wash pine nuts and drain. Place them in a pressure cooker, cover them with plenty of water, close the pan and place over high heat. Let it boil, after it reaches pressure, for approximately 40 minutes. Turn off and leave the pan covered until it cools and the pressure releases. Then, open the pan, remove the pine nuts and peel them.
