Easy to prepare, homemade cookies are always welcome for breakfast or an afternoon snack.

Ingredients

  • 1 cup (tea) of sifted wheat flour
  • 1 cup (tea) of sugar
  • ½ cup (tea) of melted butter
  • 5 tablespoons cornstarch
  • 100 ml of milk
  • 4 pineapple slices
  • 3 cute
  • 1 teaspoon baking powder
  • Grated zest of 1 lemon

Preparation mode

  1. Grease a baking tray with butter and sprinkle with wheat flour.
  2. Preheat the oven to 200ºC.
  3. Chop two slices of pineapple and set aside.
  4. In a bowl, place the wheat flour, cornstarch, sugar, yeast and mix well.
  5. Add the butter and stir well.
  6. Add the milk, egg yolks and lemon zest and mix until you obtain a homogeneous mixture.
  7. Finally, add the pineapple and let it rest for 30 minutes.
  8. On the baking sheet, distribute the dough to form the cookies, leaving space between each one.
  9. Cut the remaining pineapple slices into small pieces and place small pieces on each cookie.
  10. Bake for approximately 15 minutes.

Mom’s Tips

If you prefer, do not use pineapple in the dough.

Please note: after being picked, pineapples do not ripen. Brown marks on the pineapple skin indicate that the fruit is spoiling.
